First, there were the trees

This table did not begin with the idea of a restaurant, but with an olive grove. Walking among century-old trees we asked: how do we carry what this soil gives to a table, in its most honest form? We press our oil from our own trees at early harvest; every bottle smells of that year’s sun.

Picked in the morning, on the table by evening

Most of our greens come from our own garden; the rest from growers we know by name. Fish from the gulf’s fishermen, cheese from the peninsula’s dairy. That is why our menu changes with the season — we cook what the garden gives.

Wood fire, stone oven, patience

There is no spectacle in our kitchen; the produce itself speaks. Our bread bakes in a stone oven, our meat over olive wood, our vegetables on embers. Our aim is not merely to feed you, but to turn every visit into a day in the shade worth remembering.
